Is it safe to fax credit card numbers with ring central even though they get emailed?

I've been told that email is not a secure way to send credit card numbers or other personal data so is it safe for someone to fax a credit card number to us even though Ring Central ends up emailing us the fax in a pdf document?

How do I do this?  "tell your RC system to not email you the contents of received faxes"

The receipient is the missing link here, they would have to not email the fax later.
