I usually create a extension dedicated to the fax number.  This way I could control where the faxes go with out changing a user settings or having the phone notified.  

You could put extra E-mail addresses in if multiple people need access to the faxes, 

It is a good practice that has worked out well for my clients.

There is no cost to add additional extensions to the system.  Once created, just point company fax to this extension.
